Start a zesty culinary experience with this delicious Lemon Cheesecake recipe. The
preparation of this exquisite dessert, which is a result of the combination of a crispy base layer of biscuits with the creamy middle layer covered with a thin viscose lemon gelatin layer, is not as complicated as it sounds.
Ingredients
Bottom layer:
● 250 g whole grain biscuits
● 100 g butter
Cheese layer:
● 200 g heavy cream
● 600 g cream cheese
● 1 packet of vanilla powder
● 1 tab starch
● 1 cup sugar
● 1 grated lemon peel
● 1 lemon juice
● 3 eggs
Top sauce:
● 1 tbsp starch
● 1⁄2 tsp turmeric powder
● 1⁄2 cup water
● 170 g sugar
● 1 grated lemon peel
● 1⁄4 of a lemon’s juice
Instructions
Blend the biscuits until you get a sand-like consistency. Add your melted butter, give it a mix, transfer it to the baking tray, and flatten the surface. You can use the bottom of a glass to evenly distribute the mixture.
In a different bowl, mix together the eggs, cream cheese, sugar, vanilla powder, lemon peel and juice, heavy cream, and starch until you get a smooth batter.
Pour the batter into the baking tray, on top of the biscuit layer.
Bake the cake in the preheated oven at 180°C for 50 minutes.
While your cake is baking, prepare the sauce by mixing the sugar, water, lemon juice and peel at low heat.
Once the cake is baked, pour the sauce and let the cake chill in the refrigerator for 4-6 hours before serving.
